Scratching my head to understand how your insurance gifted you a new engine since it wasn't winterized.
I couldn't imagine my insurance rates if I cooked two engines for simply not winterizing.

Suggest electric from Lenco or Bennett. Just get ones large enough to have an effect. We have the "smallish" 150S K-planes on our 360 and unless I drop them nearly all the way down, I can hardly tell they're there. Good for out-of-the hole and levelling an offset loading, but really don't ...

Genset = generator. The 323 is a much different boating experience compared to an R5. I don't know your situation, but unless you have the 3/4 ton or above truck to pull the 15k lbs. 323 around, you'd be best to keep it at a marina for easy launching. Do you have engine block drains? Located on each side of the block below the heads. Open & rod these out as well.

Realistically, a 343 with 496HO's should be in the upper 60's range. My 2006 with 525's and the factory speed top would do low 70's.
The dream-o-meter speedo "could" possibly show 70 on the gauge. Work a deal that nets you $10k off for every WOT mph under 70!!
